Leslie's Greek Veggies

That's not as sexy a title as these potatoes and vegetables deserve. Leslie served a mission in Greece, and she used to make these for CROWDS of us that would come over to her apartment after church. So, yeah, they totally remind me of college and I was hankering for them, so I recently asked, via Facebook, if she would give me the recipe. Here's what she said:

cut up potatoes, zuchini/squash, carrots, and red onions. Douse them in salt, pepper, garlic powder, oregano, and lemon juice and bake until they're done. Easy. If you cover them with foil they cook MUCH faster.

Then I wondered about oven temp and stuff like that so I asked her and she said:

350 for about an hour and a half...till their done.

This is good stuff, Gentle Reader. Like I said, fond fond memories. I would recommend spraying your baking dish (9x13, if I remember) with PAM or whatever so you can eventually get your pan clean. Enjoy!!! I know I will.

That does sound tasty. I don't remember a Leslie. Was she at Mizzou or SMS?
